Mimosas and Samosas

Thanks for signing up for a fully interactive, virtual cooking experience! We will explore the indian specialty samosas with a twist! All dishes we will make will be easily modifiable, so vegetarians and vegans are welcome! Shopping list and cookware needed has been included below! Look forward to seeing you tomorrow!
Sweet Potato and Curry Shrimp Samosas
Ingredients:
Samosa Dough
1. 2 cups all purpose flour
2. 1/4 teaspoon salt
3. 4 tablespoons + 1 teaspoon oil
4. water to knead the dough, around 6 tablespoons
Samosa Filling
1. 3-4 medium sweet potatoes (russet are okay)
2. 2 tablespoons oil
3. 1 teaspoon cumin seeds
4. 1 teaspoon fennel seeds
5. 2 teaspoons ground coriander
6. 1 teaspoon finely chopped ginger
7. 1 green jalapeno/chili pepper chopped
8. 1 teaspoon coriander powder
9. 1/2 teaspoon garam masala
10. 1/4 teaspoon red chili powder or add more to taste
11. 3/4 teaspoon salt or to taste
12. 3 cups of oil, for deep frying
13. 3 cups shrimp
14. 1 cup cilantro
15. ½ cup green onion
16. 1 cup Coconut milk
Cilantro Chutney:
1. 1 inch fresh ginger peeled
2. 2 green jalapeno
3. 1 Juice of a lime (about 1.5-2 tbsp)
4. ¼ cup water adjust for desired consistency
5. 2 cups cilantro washed and drained
6. ½ tsp salt adjust to taste
7. ½ tsp roasted ground cumin
8. 1 tbsp honey
To Drink:
1. Your favorite wine or mimosa (orange juice/champagne)
Cookware needed:
1. Small frying pan
2. Small saucepan
3. Large pot for boiling potatoes (or pressure cooker)
4. Strainer
5. 1 large bowl and 1 large plate
6. 2 medium bowls for preparing food
7. Cutting board
8. Cutting knife
9. Cheese grater
10. Rolling pin
