A LETTER FROM ME
I absolutely love food. I always have, but I also, for years, didn’t want anything to do with the kitchen. Being a working mom means trying to fit it all in one day. After one too many blah takeout meals at the end of a particularly stressful week, I dusted off one of my family recipes, Ackee and Saltfish, a Jamaican staple that was passed down to me from my Grandmother and Aunts, and fell back in love with the simple pleasure of creating a wonderful meal for my family. Seeing the surprise of my friends learning of my newfound love of cooking and the joy of their reaction to that first delicious bite reinvigorated my desire to slow down a bit and seek more happiness. As a part-time jetsetter, I’ve incorporated my love of travel to find and recreate flavorful recipes from different parts of the globe with simple hacks in the kitchen, including putting my husband and son to work, that shave hours off preparation and cooking time so that I can also enjoy my other loves: family, friends, trips to the beach and riding my beloved cruiser bike.
