For Oxtails:
8 oz Beef Broth
3 1/2 tbsp Brown Sugar
1 tsp Browning Sauce
1/4 lb Carrots
1/2 tbsp Cornstarch
1/2 tsp Dried Thyme
6 Garlic cloves
2 tsp Garlic Powder
1/2 Green Onion Bunch
1/2 tsp Ground Allspice
1 1/3 tsp Ketchup
2½ lb Oxtails
1 tbsp Scotch Bonnet Chiles
1 tbsp Soy Sauce
1 tbsp Worcestershire Sauce
1/2 lb Yellow Onion
1/2 tsp pepper
1 1/3 tsp Salt
2 tbsp Vegetable Oil
1 cup Vinegar (for washing oxtails)
1 cup White Rice
1 cup Water
For Fried Plantain:
1 ripe Plantain
For Mango Salsa & Arugula Salad:
1 Mango
1 Small Onion
1 Small Red Pepper
1 Small container of Arugula
1 Bunch Mint
1 Lime
Cookware needed:
1. Electric Pressure Cooker
2. Strainer
3. Measuring cups and spoons
5. 1 large bowl and 1 large plate
6. 1 large bowl for seasoning oxtails
7. Cutting board
8. Cutting knife
